Editorial Review for 3 Pigs Barbecue – by Jill Lightner
The Scene
Competition is the order of the day--one wall is plastered with barbecue and chili awards, and the rest are covered in sports jerseys, athlete autographs and televisions tuned to the current season's events. Order at the counter, grab a fountain drink and have a seat at a plastic booth or wood table; food arrives speedily and condiments are already on the table.
The Food
Chopped pork and chewy hot links both set high standards--meats are pleasantly smoky and textures give just the right amount of chew. Skin-on potato salad is fresh and firm; the coleslaw has plenty of crunch and coolness. Pork and beef ribs are both available, but taste similar. Seriously tender meat could use a little crispness around the edges, and fat layers aren't properly melted into the muscle; the overall affect is both tasty and confusing. Smoky beans and cornbread muffins round out the sides.

I read some of the reviews and decided it was a safe bet. i Liked the intamate seating in the booths and the sports decorations on the walls. Thats where it stopped.. The pork rib dinner that I ordered came with 2 side orders. the beans were decent. could have been out of a can easily. the cupcake cornbread was the best part. The ribs came out and looked very dry. but smothered with sauce. Not cooked in but just dumped over the top. the pork was hard to chew though and really gristly and fatty.. basically it looked like boiled ribs with your choice of hot,med or mild sause. I was not impressed in the least and do not recommend eating there.

Finally got to eat here after being foiled twice on separate Sundays because we forgot that's when they're closed. The pulled pork sandwiches were great. My wife wanted more of the excellent sauce, but I thought the meat could stand on it's own - smoky, moist and tender. The cole slaw was creamy - but bland. The potato salad was tasty. We'll be back to try the ribs and other offerings.
