The Scene
Soft sage and taupe walls contrast gently with exposed ductwork. The hushed atmosphere is augmented by the pleasant buzz of patrons around the sushi bar, where owner Taichi Kitamura deftly carves sashimi and chats with regulars. Seats at the bar are most coveted; table service can be slow and occasionally forgetful.
The Food
Picturesque slices of yellowtail and eel are bracingly fresh, and the spicy tuna roll is letter-perfect--generously stuffed with albacore and accented with the perfect amount of heat. Tempura dishes are uneven, occasionally weighed down by too-heavy breading and too-cool temperatures. Among the entrees, the pan-seared scallops are flawless; there's also an excellent yakiniku and duck breasts.

I've been heading to Chiso's off and on in the 5 or 6 years since it opened, sharing some of the staff from I Love Sushi. In time, Chiso has developed into a mature, refined sushi presence in Seattle, and (IMHO) it's a fine place for elegant, albeit somewhat non-intimate dining. I've enjoyed bringing dates there for a lighthearted evening, although the tables are a bit close together for true intimacy. (I've found this problem at smaller places like Shiro's, for instance, where you can't help but overhear your fellow diners' conversations...or have them listen in on yours!) If seated at a table, the waitstaff are always eager to make recommendations, and if at the bar, you can feel confident that you can trust your dining experience to your chef's hands. Gochi sou sama deshita!
Pros: unique, mature atmosphere; confident staff
Cons: not a lot of elbow room, so to speak

We visited Chiso for the first time a few weeks ago just as a change of pace from our regular sushi restaurants. We weren't disappointed! We took at seat at the bar and the sushi chef immediately greeted us with a smile and welcomed us. The sushi and sashimi were all delicious, and the prices weren't bad for a sushi restaurant. Would definitely recommend!
Pros: Friendly Sushi Chef, Delicious food
Cons: Store entrance hard to spot, street parking
