There are some myths about Seattle that are all too true (it really does rain a lot here), while others--like the fact that the city doesn't have any good Mexican food--are decidedly off base. For every mediocre Taco Time, there's a hidden gem like El Paisano, the sort of questionable eatery in a questionable neighborhood that you'd only find by recommendation or simple good luck. The spot is dripping in Mexican charm that borders on stereotypical: loud mariachi music, a TV showing telenovelas and commercials for cowboy boots, the hypnotic aroma of slow-cooked meats from the kitchen in back. The meats (carnitas, birria, al pastor) are what you should gravitate towards, whether in the form of tortas with generously-applied avocado, plates that come with warm flour tortillas or tacos garnished simply with the traditional cilantro and lime. When your Californian friends start moaning about the lack of spicy salsa in the PNW, bring them here; as for the rain, they're on their own.
