The idea of locally sourced this-and-that is nothing new to Seattle, but it will never get old, either. Formerly Earth & Ocean, TRACE at the W Hotel is all about 'traceable' ingredients, like charcuterie from Salumi, cheese from Quillisascut, and chickens from Stokesberry Farm. Many of these regional ingredients are sprinkled with a dash of Asian influence by chef de cuisine Steven Ariel, most recently of LUC. But if you want a really Asian experience, head to the sushi bar for sake and sushi--sustainably sourced, of course.
