Outstanding Chicago deep dish pizza in Fremont. If you're a fan of deep dish chicago style pizza, get yourself over to Kylie's without a moment's delay. Their crust is light yet has a nice firm bite to it, and cornmeal adds a bit of crunch. Their chunky tomato sauce is filled with flavor. The price is affordable. We tried the Chicago pizza which featured a delicious fennel sausage, and then we made our own deep dish with spinach and cheese. The flavors were outstanding, and unlike many chicago deep dish pizzas, Kylie's pizza boasts the perfect balance between heartiness and lightness, so you don't feel that you and your full belly have to be rolled out the door after dinner. The restaurant itself is clean and has shiny new furniture and great big windows that are perfect for people watching and enjoying the sun. The staff is enthusiastic and friendly. Parking seems like it would be a challenge since it is in Fremont, and yet every time we have gone we have managed to score a parking spot right in front of the restaurant. The pride in their pie is apparent in the way you are served and the way they prepare their pie. If you've always wanted to try Chicago style pizza, definitely try Kylie's unless you have a boarding pass for the next flight to the Windy City.
If you're new to Chicago style pizza, please allow me to give you a tour, as a former resident of the famous Second city. It's thick, but don't mistake it for deep dish, which is mostly dough. Chicago style is loaded with topping. In fact, it’s so loaded that the toppings have more depth than the dough. Even Chi-town folks disagree on what is a REAL Chicago style pizza. The variations are: wheat crust vs. cornmeal crust, butter vs. olive oil in the dough, solid meat layer vs. sporadic meat, tons of cheese vs. coating of cheese over crust, stuffed vs. not stuffed. The depths of the pizza range from 1” to 2”. It’s always topped with tomato sauce, usually chunky stewed tomato. Got it?
So here’s what my Chicago Style Kylie’s pizza was: Fresh, crunchy, wheat-based crust, light on the oil, not stuffed, about an 1" thick, thin layer of cheese right next to dough, then meats and veggies, with the top ½ inch of it being the chunky stewed tomato sauce sprinkled with fragrant Italian herbs. They do use quality ingredients. No skimping there! It is a very healthy version, with precooked-degreased sausage and fresh veggies that retain a crisp. It takes about 25 minutes for it to bake.
As my Chi-town roomie says, “It’s a really good knock off. In fact, I might have to go try it again this weekend, but I’d order it with extra meat and extra cheese.” Don’t expect Giordano’s, but if you’re craving Chicago style pizza, try it out!
