I visited Perche'no a few months ago. We ordered a perchuto ham appetizer. I'm not sure if it was cooked. Light red with white marbling throughout. I had seafood pasta for dinner. Food came out quickly, but the pasta was cold. Some of the shellfish had not opened up which suggests they were not boiled or steamed nearly long enough. Not recommended...
