I'm an east coast pizza snob. I've lived in Seattle for 32+ years, and always missed great pizza. Yes, there have been a few good pizza places in Seattle over the years. But it hasn't been until the last five years or so that Seattle finally arrived, pizza wise. There are now probably a dozen or so really good places in the Seattle area, and Flying Squirrel is my current fave.

A pizza doesn't have to be wood fired or coal fired to be great. It'll improve a mediocre pizza to pretty good status, but some of the best pizzas in the world are made with gas ovens.

I see a perfect crust as thin, but not extra thin. That's my complaint with some of the Neapolitan places. Not quite thick enough to support the sauce and toppings, so it gets soggy on the bottom and almost needs to be eaten with a fork.

Not Flying Squirrel. Like a good New York slice, you can pick it up and fold it in half, lengthwise, to fit in our mouth better. It's crispy on the bottom, but not hard. The sauce is home made and a little assertive, and the toppings are divine. Flying Squirrel is really high end quality, using Salumi and Zoe meats, and serving Molly Moon ice cream. The Sofia is one of the best pizzas I've had anywhere.

Get there early or late. If you get there during the busiest time, be prepared to wait, or at least try going on a weekday…

A very good pizza [place tucked in a quiet neighborhood. This was not our original choice of pizza place but since Kylie's was closed due to some building issue we decided to make the trek south and try flying squirrel out. Out in the quiet genessee neighborhood sat this restaurant. Seem like a casual meeting place as we entered. We were promptly seated as we walked in. We noticed that they try to be sustainable and use local products in their pizza and sell stuff from local companies like molly moon ice cream and georgetown brewery beer on tap. It took a little while until a waitress took our order. They seem to be a little too casual about their service. We ordered a half Washington and half chicken sausage/goat cheese along with a beet salad. The salad was fresh and sweet. The pizza was very flavorful and tasty and the crust is thin and crispy. Price is reasonable. About ~20 for the pizza and ~7 for the salad. They have seasonal specials as well which the beet salad was. Other than the service, this place is great and you should give them a try.…

Pizza worth a trip (and repeat trips) to Seward Park. In a residential neighborhood in South Seattle is the pizzeria you wish was on your block. Flying Squirrel handles the classics with aplomb but isn't afraid to test the boundaries of pie-making. The two-room storefront has bar seating for those who want a local microbrew while waiting for their takeout order, as well as a sit-down section for local families and couples on date night. Pizzas come topped with meats from purveyors like Salumi and Zoe's, ranging from the traditional pepperoni and mozzarella to the more adventurous pulled pork with cotija cheese. The crust is near-perfect, with just the right amount of chew and char. Get there early, as they've been known to run out of dough on busy nights.…

Best Pizza and salad ever!!. What a great surprise this resturant was when I was visiting my son and family who live near by. Started with the daily special salad with local grown beets and a great home made dressing. Next came the sausage with garlic pizza, WOW the best ever!!

My home is in New Hampshire, and the Flying Squirrel has become my favorite resturant in the Seattle area. Will be heading to Seattle for Thanksgiving, and cannot wait to head to the Flying Squirrel again.

Best Pizza in Seattle!!. I have to say that Flying Squirrel has some of the best pizza that I've ever had. And to qualify that for you, I've lived in New York City for 8 years and had plenty of their best. Flying Squirrel Pizza is of the two best pizza's I've ever had, the second being in Venice, Italy. No, Flying Squirrel is not brick oven Italian pizza, that just happened to be my other favorite. The Squirrel offers spectacular crust, great sauce, and a creative menu to choose from. If you're interested in the good ole fashioned pepperoni and such, they have that too. My favorite? Add mama lils' to your pizza. They're awesome! And they're not too spicy. This place is definitely worth driving for, not that I have to 'cause I'm local, but I would if I wasn't. I used to not be local and make the drive for Tutta Bella, but I won't be eating at Tutta Bella's anymore since the Squirrel moved in.…
